With the graduation season well under way and kids preparing for the end of the school year it can only mean one thing, Spring is here! What an exciting time of year it is. Here at Geppetto Catering we have had a graduation of our own. Ken Tu has been promoted to Operations Manager and Lily Lippman joins our team as an Assistant Event Designer. Outdoor Entertaining Tips
While entertaining moves to outdoor spaces, below are some things for you to keep in mind to ensure your guests stay comfortable.
Some small things that go a long way:
Place a basket of sunscreen, bug spray and baby wipes around the outdoor space for guests.
Consider a branded gift that helps keep guests comfortable. Mini fans, hats and sunglasses are a few to consider.
Have several beverage stations to keep your guests cool and hydrated. Ice tea, lemonade water flavored with cucumber or lemon are great options.
Some big tricks of the trade:
If hosting a large group consider renting outdoor restrooms. Blue Ribbon Restrooms has a wonderful selection of mobile facilities.
Tents with fans and air conditioning protects from unpredictable weather conditions. Sugar Plum Tents in Boyds, MD is a respected source.
Consider keeping buffets inside the home or office. This will help maintain the appropriate temperature of your meal and prevent bugs from joining the party.

Rockfish Sunburst Tomato Ceviche
Last week I took my family to the Bethesda Central Farmers Market. What an array of wonderful produce, fish, meats, cheeses and eggs we purchased. The item that made my day was sunburst tomatoes. They are as sweet as candy and a true crowd pleaser. Below is one of the easiest meals to prepare and never gets old. I hope you agree!
2 pints of sunburst tomatoes cleaned and cut in half
1 pint of diced fresh rockfish
1 tablespoon of chopped shallots
2 tablespoons of chopped bermuda onion
2 tablespoons chopped cilantro
1 rocoto chili or 1 habanero pepper chopped
¼ cup of lemon juice
½ cup of lime juice
Take the prepared rockfish, vegetables and place in a bowl. Take the lemon and lime juiceand toss with all ingredients. Season with salt and pepper to taste. Serve over a bed of your favorite crisp greens.
Josh’s Tip: Make sure to where gloves when cleaning and chopping the peppers!
