Rockfish Sunburst Tomato Ceviche
Last week I took my family to the Bethesda Central Farmers Market. What an array of wonderful produce, fish, meats, cheeses and eggs we purchased. The item that made my day was sunburst tomatoes. They are as sweet as candy and a true crowd pleaser. Below is one of the easiest meals to prepare and never gets old. I hope you agree!
Serves 6
2 pints of sunburst tomatoes cleaned and cut in half
1 pint of diced fresh rockfish
1 tablespoon of chopped shallots
2 tablespoons of chopped bermuda onions
2 tablespoons chopped cilantro
1 rocoto chili or 1 habanero pepper chopped
¼ cup of lemon juice
½ cup of lime juice
Take the prepared rockfish, vegetables and place in a bowl. Take the lemon and lime juiceand toss with all ingredients. Season with salt and pepper to taste. Serve over a bed of your favorite crisp greens.
Josh's Tip: Make sure to wear gloves when cleaning and chopping the peppers!
