Greetings!

- 2013 has started off with a bang! The Inauguration and all of the celebrations around town were so much fun to be a part of. Now as the weather slowly begins to warm, I remind myself that spring is just around the corner.

- My mind starts to wonder as I imagine strolling through the many local farmers markets with my family, hikes through the trails along the C&O Canal and the joy I have in planning my spring garden. Some of my favorite vegetables to plant this season will be yellow squash, bright purple eggplant and of course; heirloom tomatoes.

- This month, try our Grilled Tarragon Chicken Breast with Asparagus. I recommend serving this dish over a bed of greens and pairing with an orzo pasta salad or cous cous for a slightly heavier meal.

- The spring season brings an onslaught of galas, networking events and fundraisers. As you receive invitations as a guest to these events, consider these tips below as a follow-up.

- Tips to Consider:
- • Always send a hand written thank you note to the individual whom invited you as their guest.

- • When invited to fundraising events and galas, consider making a contribution in honor of your host. The amount of your gift should be in an amount you are comfortable with.

- • After you have made new connections or strengthened existing relationships, follow up with a call suggesting reconnecting over coffee.

- Grilled Tarragon Chicken Breast with Asparagus
- 4 boneless chicken breasts
- Chopped fresh tarragon
- Olive oil, to taste
- 20 pieces of asparagus
- Marinade chicken breast with chopped fresh tarragon and olive oil to taste. Grill chicken breast for four minutes on each side. Once cooked on both sides, place chicken on a platter and cover with plastic wrap. Allow chicken to sit until room temperature. Then place in the refrigerator to chill. Blanch asparagus in boiling water for two minutes. Pull from hot water and place in an ice bath to chill.
- Dressing:
- ¼ cup olive oil
- ¼ cup of fresh lemon juice
- Salt and pepper to taste
- Whisk the above ingredients until emulsified. Serve grilled chicken over a bed of your favorite field greens accompanied by the asparagus and topped with the citrus dressing.
- Chef Comments:
- This is one of my favorite spring meals on a fly! I often keep the chicken in the refrigerator for a day or so to pull out and serve over greens with asparagus. If I am looking to make the meal a little heavier, I usually add orzo pasta salad or cous cous salad as a side. Enjoy!
