       Winter 2015

Greetings!

With the recent warm up over the last few days I feel like winter is quickly coming to an end. With warmer temperatures we can get outside and enjoy the wonderful community we all call home.

Before you know it we will be busy with Easter and Passover celebrations. In the etiquette section I will provide some things to keep in mind as you host meetings and events during Passover and the season of Lent.

I also wanted to share one of my favorite recipes; Seared Sesame Ahi Tuna. I hope you find it as enjoyable as I do.

In our Community Corner I have featured The Potomac Hunt Races benefiting TAPS. It's a wonderful way to host colleagues and clients while supporting an incredible nonprofit.

Thanks for a great start to 2015.

I look forward to hearing from you soon!

Josh

Passover and Lent

If you are organizing a company meeting or event during the upcoming religious periods; Passover or the season of Lent; consider these alternative menu options to satisfy all of your guests' needs.

  • • Passover begins Friday, April 3rd and ends Saturday, April 11th. Those who observe Passover avoid leavened bread. Menu alternatives include entree salads (opposed to sandwiches), matzah (instead of rolls and butter), and macaroons (instead of cookies and brownies).
  •
  • • Lent is the Christian season of preparation before Easter. In Western Christianity, Ash Wednesday marks the first day, or the start of the season of Lent, which begins 40 days prior to Easter. Those observing Lent may request non meat options such as fish or a vegetarian dish. Consider including one of these selections as an alternative to meat or poultry.

Seared Sesame Ahi Tuna

Serves 4

2 lbs. fresh ahi tuna steak (in one piece)

4 tbsp. black sesame seeds

4 tbsp. white sesame seeds

2 tbsp. olive oil

Sauce For Fish:

1 clove chopped garlic

1 tbsp. soy sauce

1 tbsp. sesame oil

¼ tsp. lemon zest

1 tsp. rice wine vinegar

1 pinch paprika

Mix black & white sesame seeds on a flat dish. Drench all sides of tuna in sesame seeds (dispose of extra sesame seeds to avoid cross contamination). Heat olive oil in a non- stick saute pan. When oil is hot, sear each side of the tuna steak for one minute. Once all sides are seared, place on a clean dish to rest for 5 minutes and then slice.

Combine sauce ingredients in a jar and shake well. Serve over sliced tuna.

Chef Tip: Serve with steamed sugar snap peas and basmati rice.

Potomac Hunt Races

Held in the heart of Montgomery County's horse country, the Potomac Hunt Races is an annual tradition, celebrating the sport of steeplechase racing. Amidst the thrill of thundering hooves and soaring horses, race day festivities include a car display, mounted police demonstrations, a moon bounce, pony rides, and vendor row. Enjoy the camaraderie of friends and colleagues, the beauty of nature, and the majesty of the equine athletes - all within the pristine rolling fields of the Kiplinger estate in Poolesville, Maryland. The Potomac Hunt Races benefits the Tragedy Assistance Program for Survivors. TAPS provides comfort and care to anyone grieving the death of a loved one serving in the Armed Forces.

Sponsorship tents for companies wishing to entertain clients and/or employees are also available. Sit back, relax, and enjoy the adrenalin rush of the racing horses!
