Lamb Lollipops with Mint Pesto








Serves 6-8


1 1/2 cup fresh basil leaves
1 1/2 cup of fresh mint leaves
1/4 cup of toasted pistachios
4 cloves of garlic
2 tablespoons of fresh lemon juice
1 teaspoon of sea salt
1/2 teaspoon of fresh ground black pepper
1/2 cup of virgin olive oil
Mix all of the above ingredients in a food processor and save to serve with lamb lollipops


2 lbs of lamb loin
sea salt and cracked black pepper
1 cup of chopped fresh chives
1 cup of chopped fresh chervil

Season lamb with above ingredients and marinade for 24 hours.  Grill the lamb loin on all sides for 1-2 minutes.  Once lamb is removed from the grill, slice 1/4 inch thick and place on bamboo skewers. Serve pesto sauce on the side or with a dollop of on each lollipop.
